Dear Bakers,
…and chefs, and cooks, who’ve just now found they have a taste for making food. Thank you – not just for feeding us, but for enriching life’s flavors.
Bread used to come from commissaries, packaged in plastic which looked just like every other loaf next to it. Now, they’re wrapped by hand and come from homes.
Cookies used to be squirted out of machines on to a never-ending assembly line monitored by computers to check for imperfection. Now, each sweet morsel is hand-made, with the odd one having an extra chocolate chip or two.
When we ordered food, we used to get exactly what was on the menu. Now, we get more.
We have our Hainanese Chicken, Lechon, Beef Bulgogi or Birthday Noodles delivered with a handful of gratitude and a side-order of “doing our best to help each other out.”
Your cooking, dear chefs and bakers, is something we never knew we needed. So please, keep pounding that flour, keep sprinkling on the good stuff, keep grinding that coffee, and keep the fires of our economy burning as warmly as your ovens.
We don’t mind food not being fast, cheap, or easy. So long as it’s from the heart, good – and REAL.
